"What's for dinner?"

I love to cook!!! I love to eat!! One of my most favorite things to ask my husband are "what do you want for dinner?" And I give him a choice of two things or I just tell him what we were having. Well, things are really different here with just the boys and me. When Cliff was last home I introduced him to veggie egg rolls and he loved them!! I am still trying to loose weight and one thing I have noticed over the past week is that the weight comes off a little easier since I don't make big meals anymore.

For instance, after our long bike ride last Sunday I made a veggie pasta dish. It has lots of red sauce and some Romano cheese. I loved it and Holden liked it as well. I eat a lot of fruit and not as many veggies as I should some days. But honestly I could live on trail mix! When I go to other people's home I do not turn down pasta with meat! I don't slice cheese off of a block anymore for snacks. I really don't miss it either. It may seem strange, but I also don't get as tired or lethargic as I used to.

I stay really busy with housework, yard work and being active with the boys. So, that is what is for dinner--no square meals or 3 course meals either. We are healthy and happy, too!

That's very much how we do it. We eat what we want, when we want. Sure takes some pressure off ol' mama, to prepare some big MEAL. Nobody's interested in that. A bowl of cereal, or an egg sandwich, some chips and salsa. We're eating well, and easy! :)
